Chaat Masala is a tangy and savory spice blend commonly found in Indian street food and snacks. Its name, "Chaat," refers to a category of savory snacks popular across India. Chaat Masala ingredients include dry mango powder (amchur), black salt (kala namak), white salt, black pepper, and red chili pepper.   4. Stir in 2 diced tomatoes and cook until they soften and release juices, about 5 minutes.
  5. Add 2 tbsp of garam masala, 1 tsp of ground cumin, 1 tsp of ground coriander, 1/2 tsp of turmeric powder, 1/4 tsp of cayenne pepper, and salt to taste. Cook until the spices become fragrant, which typically takes 1-2 minutes.
  6. Add 2 cups of cooked chickpeas to the skillet and stir well to coat them with the spice mixture.
  7. Pour in 1 cup of water, bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 15-20 minutes, stirring occasionally, until the flavors meld together and the curry thickens slightly.

  1. Take a large pot and  warm 1 tablespoon of olive oil over medium heat. Add the 1 chopped onion and cook until softened, about 5 minutes.
  2. Add the 2 cloves minced garlic to the pot and cook for another minute until fragrant.
  3. Stir in the 4 chopped carrots and 2 diced potatoes. Cook for about 5 minutes, allowing them to slightly soften.
  4. Pour in the 4 cups vegetable broth and bring the mixture to a simmer. Let it cook for about 15-20 minutes, or until the carrots and potatoes are tender.
  5. Once the vegetables are cooked, use an immersion blender or transfer the mixture to a blender and blend until smooth.
  6. If needed, transfer the blended soup back into the pot. Stir in 1 teaspoon of garam masala, ½ teaspoon of ground cumin, ½ teaspoon of ground coriander, ¼ teaspoon of turmeric powder, salt, and pepper to taste.
