NATURAL RED QUINOA

Spicy Red Quinoa Salad

Ingredients:

1 cup red quinoa; 1 tbsp olive oil; 1 cup corn; salt and pepper to taste; 1 can black beans, rinsed and drained; ½ red bell pepper; 1 scallion, diced; ½ cup fresh cilantro; ½ jalapeno, finely minced; avocado for topping

Salad Dressing:

¼ cup extra virgin olive oil; 1 ½ lime, juiced; 1 garlic clove, finely minced; ½ tsp cumin; ¼ tsp cayenne pepper; ¼ tsp salt

Instructions:

Salad Dressing

• Whisk together olive oil, garlic, lime juice, cayenne pepper, salt, and cumin in a large mixing bowl.

Quinoa Salad

• Cook the quinoa and fluff with a fork. Set aside the quinoa.

• Drizzle olive oil in the sauté pan and sauté the corn, salt, and pepper. Cook for 12 to 15 minutes until the corn is tender and has turned slightly brown.

• Add all the ingredients together with the quinoa along with the dressing and toss it well.

• Serve.
