THAI HOM MALI WHITE JASMINE RICE

Thai Hom Mali Fried Rice

Ingredients:

1 cup jasmine rice, uncooked; 2 cups water; 2 tbsp vegetable oil; ¼ cup minced white onion; 1 tbsp minced garlic; 1 tbsp minced garlic; ½ cup diced carrots; 1 tsp sesame oil; 2 large eggs, whisked; ½ cup peas; 1 tbsp soy sauce; salt; white pepper; 2 tbsp green onions, thinly sliced

Instructions:

• Cook the rice and let it cool at room temperature. Fluff it with a fork and keep it aside.

• Heat a wok over high heat. Add 1 tbsp of vegetable oil and once the oil is hot, add rice.

• Stir-fry the rice and evenly coat it with oil. Cook it for 30 seconds then stir.

• Repeat this process till the rice has started to turn slightly brown.

• In the center of the wok make a large well and add 2 tbsp of oil. Add the whisked egg, onion, garlic, carrots, and stir fry.

• Add in soy sauce and peas. Stir to combine. Cook for 2 minutes. Taste and add salt and pepper to taste.

• Garnish with green onions and serve.
