EXTRA LONG WHITE BASMATI RICE

Long Grain Basmati Rice Stuffing

Ingredients:

2 tbsp olive oil; 1 cup minced onion; 1 cup white long-grain rice; 1 tsp ground cumin; ½ tsp curry powder; 1 minced garlic clove; 1 cup chicken broth; 1 bay leaf; ½ tsp salt; ¼ cup dried cranberries; ½ cup pecan chopped; 3 green onions sliced

Instructions:

• In a medium saucepan, heat olive oil. Add onion and cook until they are translucent and softened.

• Stir in rice, curry powder, and cumin and cook stirring continuously until they are light brown. It will take about 7 to 10 minutes.

• Stir in the minced garlic until fragrant for about 30 seconds. Add the broth, bay leaf, and salt and bring the mixture to a boil.

• Reduce the heat. Cover and cook until the rice is tender and the water is absorbed for around 15 to 17 minutes.

• Remove the bay leaf and fluff it with a fork. Stir in cranberries and pecans. Garnish with green onions.
