NATURAL INDIAN CHAI TEA/CHAI ROYALE

Chai Blossom Mocktail

Ingredients:

½ cup sugar; ½ cup fresh lime juice; 8 to 12 oz. club soda; 4 whole star anise pods; 4 lemon twists; 1 ½ tbsp chai royale

Instructions:

• In a sauce pan bring 2 cups water to boil.

• Once the water starts boiling, switch off the heat and add the tea leaves.

• Cover the pan and let it steep for 8 to 10 minutes.

• Add sugar and give it a stir. Let the syrup cool.

• Pour the concoction in a pitcher and add the lime juice and stir.

• Divide the liquid in 4 rock glasses filled with ice. Add 2 to 3 oz. club soda in each.

• Garnish with anise pods and lemon twists.
