NATURAL YELLOW MUSTARD SEEDS

Cauliflower with Melted Onions and Mustard Seeds

Ingredients:

1 tbsp unsalted butter; ¼ cup vegetable oil; 2 ½ pounds cauliflower, cut into 2-inch florets; Salt and freshly ground pepper; 2 large sweet onions, thinly sliced; 1 tsp curry powder; 1 tsp yellow mustard seeds; 1 tbsp fresh lemon juice; ½ cup chopped cilantro

Instructions:

• Preheat oven to 450°F. In a large roasting pan, melt the butter in 1 tbsp oil in the oven. Swirl to combine.

• Add the cauliflower, stem up, and season with salt and pepper. Cover with foil and bake on the bottom shelf of the oven for 30 minutes.

• Increase the temperature to 500 o F for 10 minutes or until the cauliflower starts to caramelize on the bottom.

• Meanwhile, take a large skillet, heat the remaining 3 tbsp of oil. Add the onions. Cover and cook over low heat while stirring continuously until the onions are tender.

• Add curry powder and mustard seeds. Stir and cook until it is fragrant.

• Add lemon juice and season the onions with salt and pepper.

• Transfer the roasted cauliflower to a large bowl and spoon the onions on top.

• Garnish with chopped cilantro and serve at once.
